Gourmet taste without the gourmet name. My Lil' Bit named these tacos because they are... you guessed it... messy!
There are several steps to this meal. You can of course eliminate or change any parts to suit you or your family's needs. My Em is a vegetarian so she eliminates the meat :) If you are Vegan, then just adjust the recipe to suit your needs! This serves about 6 people :)

Ingredients :
4 large pork chops (de-boned and fat removed) Chop into bite sized chunks
1 sm onion
1 cup cilantro
4 cloves garlic/ minced
1 lime
3 tbs of cumin
1- 28 ounce can Organic Chopped tomatoes
sea salt to taste
Organic lettuce
2 cups cooked brown or white rice (keep warm)
1 can of vegetarian black beans (warm)
Cheese (your choice... enough to serve as a topping)
Sour Cream (as topping)
extra lime slices for those who wish to squeeze onto taco
Tortillas (corn, wheat, or flour are fine. We use a corn, wheat combo)

Step One: Remove bone and fat from the pork. We used basic pork chops from pigs we raised ourselves. Chop the pork into bite size portions.
Step Two: Lightly oil pan with olive oil. On medium heat, cook the pork until thoroughly done. Add garlic and cilantro.
Step Three: Add diced tomatoes and chopped onions. Cook on medium heat until the onions are done and the tomatoes have cooked down. It takes about 10 - 15 minutes.
Step Four: Put it all together! We layer in this order: Tortilla, rice, beans, meat mixture, lettuce, salsa, cheese, and sour cream. I like to add a squirt of lime over everything :) You can also add guacamole or avocado slices.
